Dark Chocolate & Squash Oaty Bars

Did you know? Winter squash is classed as a low glycaemic index (GI) vegetable due to its fiber content, meaning it doesn’t spike blood glucose levels. These Squash Bars from Nikibakes are a great treat over the Halloween period, and while the kids are home during the October half term why not get them involved with making the recipe.

You'll need to puree your squash in preparation for the recipe, simply chop the squash into small bitesize chunks and pop on a baking tray, drizzle some olive oil and roast in the oven for 30 mins or until the squash has softened. Once soft, pop the squash chunks in a blender and whizz until it's become a puree consistency.
