Roasted Thai Butternut Squash & Ginger Soup

A fabulous vibrant, lightly spiced fragrant soup. Rich in beta carotene this creamy soup is packed with plenty of anti-inflammatory and immune supporting ingredients. Squash and pumpkins are an excellent source of soluble fibre to support digestive health and provide food for the healthy bacteria in our gut too. For speed use a bag of prepared butternut squash chunks.
