Chicken Sausage Pasta

Ingredients

  • 3-4 garlic cloves - finely chopped
  • 1 thumb of ginger - grated
  • 1 small chili - grated
  • 250g pasta of choice - uncooked (I use Doves gluten free brown rice pasta)
  • 350g chicken sausages - sliced
  • 400g tinned tomatoes
  • 1 tbsp tomato puree
  • 1 red onion
  • 1 white onion
  • 2 bell peppers
  • 1 courgette
  • 1 tbsp of oil
  • Salt & Pepper

Instructions

  1. Gently fry chili, ginger and garlic for 30 secs until fragrant.

  2. Add diced onions and cook for a further 2 mins or until they begin to soften. Followed by the sliced sausages and cook until beginning to
    brown slightly.

  3. Add the remaining vegetables followed by tinned tomatoes, tomato puree and a dash of water. Allow to simmer over a medium heat for around 12-15 mins. This is your sauce.

  4. Meanwhile cook pasta according to instructions. Once cooked, stir into sauce and serve!
