Niki's Baked Lemon Garlic Salmon

 

Another tasty, Mediterranean-inspired dish from Nikibakes. The bold flavors of the lemon garlic sauce compliment the salmon packing a punch in every bite. Lying on a bed of rice, studded with pumpkin and sunflower seeds which add a crunchy contrast to the tender soft salmon. 

 

A Mediterranean-style diet, rich in colorful fruit, vegetables, and anti-inflammatory omega 3 from oily fish, such as salmon, appears to be particularly beneficial for our mood. NHS guidelines recommend eating 2 portions of fish a week, including 1 portion of oily fish, such as salmon.
