- 3-4 garlic cloves finely chopped
- 1 thumb of ginger grated
- 1 small chili grated
- 250g pasta of choice uncooked (I use Doves gluten free brown rice pasta)
- 350g chicken sausages sliced
- 400g tinned tomatoes
- 1 tbsp tomato puree
- 1 red onion
- 1 white onion
- 2 bell peppers
- 1 courgette
- 1 tbsp of oil
- Salt & Pepper
Gently fry chili, ginger and garlic for 30 secs until fragrant.
Add diced onions and cook for a further 2 mins or until they begin to soften. Followed by the sliced sausages and cook until beginning to
Add the remaining vegetables followed by tinned tomatoes, tomato puree and a dash of water. Allow to simmer over a medium heat for around 12-15 mins. This is your sauce.
Meanwhile cook pasta according to instructions. Once cooked, stir into sauce and serve!
