Delicia's Mini Mushroom Wellingtons



We teamed up with Nutritiously Delicia to bring you a couple festive recipes. Delicia wanted to share a plant-based Christmas option that isn’t boring and she's certainly delivered! These Mini Wellingtons contain stuffed portobello mushrooms with a herby, lentil filling encased in golden puff pastry. This recipe can also be easily be made gluten free by swapping the puff pastry to a gluten free option.
